TOFU SCRAMBLE BY LIVINGREENCUISINE


New to vegan diet and missing eggs? I know I did when I first went veg! My favorite was scrambled eggs, and this can totally be made vegan. It’s so easy and only takes a few ingredients that you might already have in your kitchen. It’s a high protein low carb low fat dish you can easily prepare for breakfast and it’s the perfect blank canvas to add in any of your favorite veggies! I always add in cherry tomatoes and spinach.

Tofu scramble

1 block firm tofu

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

½ tsp of turmeric powder

1 tbsp. vegan butter (optional)

Drain your tofu from the water its packaged in. Heat your non-stick skillet and add your tofu and spices.

Break up the tofu with a spatula so that it resembles scrambled eggs.

Cook for about 8-10 minutes or until you feel most of the water in the tofu has been evaporated. Serve and enjoy!
