VEGAN NACHO CHEESE by LIVING GREEN CUISINE
This might be your new food addiction! Vegan nacho cheese just might be better then the real thing. There’s no guilt here, the main ingredients are carrots and potatoes.
3 large carrots
2 medium size potatoes
2 tbsp lemon juice
Handful of soaked cashews (optional)
1/2 nutritional yeast
2 tsp salt
1/3 cup of any plant based milk or water
Soak your cashews for at least 2-3 hours or overnight. Adding cashews IS optional. It makes it creamier and and holds up better when reheating but it’s not necessary. Steam your potatoes and carrots until soft. Throw all your ingredients in a blender until smooth and creamy. Stir in some jalapeños or your favorite salsa!
